      The Miyabi Kaizen II 5000FCD Santoku knife 7" is a versatile, all-purpose kitchen knife that blends traditional Japanese design with advanced steel technology.       At its core is FC61 fine-carbide stainless steel, known for its impressive hardness, edge retention, and chip resistance. The blade is clad in 48 layers of stunning flower-pattern Damascus and undergoes a double ice-hardening process (Friodur®) to enhance durability and corrosion resistance. Finished with the Honbazuke hand-honing method, the edge is sharpened to an exceptional 9°–12° angle per side for precise, scalpel-like performance.
