      Amur caviar — Acipenser Schrenckii — is elegant and refined, yet the most approachable entry into the Amur River family.

      The pearls are medium to large at 2.6-3.0mm with a firm texture and a beautiful golden to amber hue that sets them apart from the darker caviars in our lineup.

      The flavour is clean and measured: mildly buttery upfront, with a gentle brine, soft earthy notes, and a fresh finish that doesn't overstay its welcome.

      Native to the same Amur River basin as our Kaluga (Huso Dauricus), Amur sturgeon shares the warm colour signature and natural elegance of that family — but in a lighter, more delicate expression. It's also one of the parent species of our Imperial caviar, a hybrid of Kaluga and Amur that sits between the two in both flavour and profile.

      How does Amur compare to Kaluga and Imperial?

      Think of them as three expressions of the same origin. Kaluga is the richest and most prestigious — large golden-brown eggs, deep buttery richness, long finish.

      Imperial, a hybrid of Kaluga and Amur, sits in the middle: medium eggs, a fuller flavour that blends the earthiness of Amur with some of Kaluga's richness.

      Amur is the lightest of the three — clean, gently briny, earthy, and fresh — the ideal starting point if you want to explore the Amur River family before moving further up.
